Yogurt Sauce

This goes with many dishes such as Aashak, Burani Kachalo, etc.


  • Yogurt
  • Salt
  • Garlic
  • Sour cream
  • Qurut (reconstituted dairy product)
  • Cold water


In a medium bowl, take 1 cup of plain yogurt, 1/8th tsp salt, 1/2 tbsp finely chopped garlic, 3 heaping tbsp of sour cream, and 3 tbsp of “Qurut” (which is available in Afghan and Iranian grocery stores). “Qurut” is a type of processed yogurt with a curt taste; it really adds to the flavor. Mix together the ingredients and add about 1/2 cup of cold water (enough to give it the consistency of salad dressing).
